Opened in 2010, The KOVE - KOsher & VEgan - serves certified kosher, dairy-free foods. The operation is certified kosher by Dickinson's rabbi.  Vegan entrées and Halal options are also available, and add another dimension to The KOVE.

Dickinson's rabbi is available to answer kitchen employee questions and visits the operation at least once each week to inspect incoming food shipments. The kosher kitchen is located within the Holland Union Building as a separate production facility. The kitchen and serving area are led by KOVE employees who are certified by Dickinson's rabbit.

The KOVE is open in the Dining Hall Sunday dinner, Monday through Thursday lunch and dinner, and Friday lunch. All other times KOVE is closed for shabbat. 

General facts and rules about kosher cooking that are upheld at The KOVE:

  • Kosher foods are prepared in accordance with Jewish biblical law and rabbinic extensions.
  • Many everyday products used throughout Culinary Services are certified kosher. Items such as condiments, beverages, spices, fresh fruits, and vegetables are used. The KOVE utilizes these common products when possible.
